Panera Mediterranean Veggie Sandwich (copycat)

Ingredients

  • 2 slices Tomato Basil Bread
  • 3 tablespoons Hummus
  • 1 tablespoon Feta, crumbled
  • 3 Peppadew Piquante Peppers
  • 1 Red Onion
  • 1-2 Vine-Ripened Tomatoes
  • 1-2 leaves Green Leaf Lettuce

Instructions

Prepare the Veggies

  • Using a sharp chef's knife on a cutting board, slice the red onion into rings. About 1/4" thick. Need just 4 per sandwich.
  • Cut the cucumber into quarters.
    Remove seeds from the watery middle section.
    Cut the 4 sticks in half lengthwise.
    Finish by slicing all 8 sticks into pieces.
    Need about 2 tablespoons worth per sandwich.
  • Roughly chop about 3 Peppadew Peppers. Need about 1 tablespoon worth per sandwich.
  • Trim 1-2 leaves of green leaf lettuce, leaving just the green part of the leaf. Then cut the lettuce into 4 pieces, careful to leave the ruffle on the each of each one. Need enough lettuce to cover one slice of bread per sandwich.
  • Use a serrated knife to slice tomatoes about 1/4" each. Need 4 slices per sandwich.

Assembling the Panera Mediterranean Veggie Sandwich

  • Spread a thin layer of hummus on each slice of bread.
  • Add a layer of green leaf lettuce to one slice of bread.
  • Sprinkle crumbled feta on top of the remaining hummus slice.
  • Add chopped peppadew peppers over the feta.
  • Lay the cucumber slices over the peppers and feta.
  • Add 4 onion rings on top of the cucumber. Panera places 2 on each half so that when it is cut, the rings stay in tact.
  • Add 4 tomatoes on top of the rings. Again, 2 tomatoes on each half.
  • Close the sandwich and enjoy!
